It would be very useful to be able to have two or more notes open at once. and have both of them editable.

The title and your note seem like two different requests?
To pin a note, just create a tag called PINNED. If you want it to show up at the top of the tag list, call it "00. PINNED".
The reason I prepended it with two zeros is because I have a series of tags starting with 01, then 02, then 03, plus the tag name. Those tags show up at the top of my tag list.
